Healthy Zucchini Muffins Recipe

Ingredients
- 4 eggs
- 1 tsp salt
- 60 ml sunflower oil 1/4 cup
- ½ tsp black pepper
- ¼ tsp nutmeg
- 230 g plain, all-purpose flour 1⅓ cup
- 10 g baking powder 2 tsp
- 50 g mozzarella cheese 1/2 cup
- 4 spring onions aka scallions chopped
- 4 zucchini
- 15 g dill chopped
Instructions
- Whisk the eggs with the salt.4 eggs, 1 tsp salt
- Add the oil, black pepper, nutmeg and give it a mix.60 ml sunflower oil, 1/2 tsp black pepper, 1/4 tsp nutmeg
- After that, add the flour and baking powder and mix it again.230 g plain, all-purpose flour, 10 g baking powder
- Mix in the mozzarella cheese, dill and spring onions.50 g mozzarella cheese, 4 spring onions
- Peel and grate the zucchinis.4 zucchini
- Squeeze out the zucchini juice by hand and add in the batter mixture.
- Mix them with until they are combined
- Preheat the oven to 180°C / 350°F.
- Distribute the mixture equally to all the muffin cups.
- Bake it for 50 minutes until they're golden brown on top.
Notes
- As this recipe has low fat, make sure to grease your muffin cups or use nonstick muffin cups to prevent it from sticking. For instance, you can simply brush oil into the muffin papers or spray each of them with nonstick cooking/ baking spray before you put the batter.
- If you like you can spread it all in a baking dish and bake it as one large slab. In that case, lining your dish with baking paper would prevent it from sticking to the dish.
- You can freeze and defrost them as needed.
